Today my co-worker Jamie arrived back from her vacation in Vietnam. SHE GOT ENGAGED while she was in Vietnam. I said to her, ‘Jaimee, what did you look like when he asked you to marry him?’
Nice..James..nice.
So Ervina and I decided to decorate a huge white board for her arrival today.
She needed a chair. Yes, I blew up all of those HUGE balloons.

The I decided to bake her a cake. It was so much fun.

This cake is vegan (frosting isn’t) recipe here.

It was so cute. Apparently he was super nervous to propose to her. He didn’t have a ring, so he gave this one to her. How cute. They’re going ring shopping this weekend.
We are so proud for her, she’s such a lovely girl.

Amazing Chocolate Cake
2- 9″ rounds, 1- 9×13 pan
‘it may be vegan, and it may be easy…but it’s amazing’

3 c. self-rising flour
1 c. unsweetened cocoa powder
1 c. white sugar
1/2 c. brown sugar, packed
1/2 c. vegetable oil
1 tsp. baking soda
1 TB white vinegar
1 TB vanilla
2 c. water
1. Pre-heat oven to 335/165 degrees
2. In a mixing bowl combine flour, sugars and cocoa
3. Make a swell in the dry ingredients and add the baking soda. Pour the white vinegar over the baking soda and let it fix.
4. Make another well and pour in the vanilla
5. Add in the water and mix well. Make sure to scrap down the sides and bottom.
6. Place in a greased pan(s) and bake until firm to touch in the middle, about 30-35 minutes.

Carmple Cupcakes
18 cupcakes
‘Mish, these are so good. I love the frosting’
A moist and fall inspired cupcake w/ a toffee/caramel topping that is to.die.for
Cupcakes
1 c. butter
1 c. white sugar
2 eggs
1/2 c. maple syrup
1 c. grated apple–i used granny smith
2 tsp. baking soda
1 tsp. salt
1 TB vanilla
3 c. self-rising/all-purpose flour
1 c. water
Icing
2 TB butter
1 TB brown sugar
1 tsp. vanilla
2 TB caramel sundae sauce
1- 1 1/2 TB milk
2 c. powdered sugar
Cupcakes
1. Beat butter and sugar together
2. Add maple syrup and grated apple
3. Add in vanilla
4. Add in baking soda, salt and flour
5. Add in water
6. Place in normal sized cupcake holders–about 1/4 c. of batter
7. Bake at 335/165 for about 15-20 minutes
Icing
1. In a small fry pan melt over high heat butter and brown sugar.
2. Get mixture boiling for about 2-3 minutes
3. Take off heat and add 1 tsp of vanilla to hot mixture
4. Let it cool to room temperature
5. Add powdered sugar, milk and sundae topping. Add more liquid if needed

One Day a Housewife Pie
1- 9″ pie


Filling:
7-8 granny smith apples: peeled, cored, and sliced into thinish slices
1 c. raisins, 1 c. crushed walnuts, 2 tsp cinnamon, 100 g (3ozs) butter
1 TB cinnamon
5TB flour
dash of nutmeg
Crumb topping:
1 c. quick old fashioned oats
1/2 c. plain flour
4 TB sugar
1 TB cinnamon
100 g (30zs) butter, melted
1. In a large bowl combine sliced apples, 1 TB cinnamon, flour
2. In a small fry pan melt 100g/3oz butter and toss in walnuts and raisins w/ 2 tsp cinnamon and a dash of nutmeg. Fry until the raisins are plump
3. Combine the raisin/walnut mixture with the apples..stir
4. In a prepared 9″ pie crust, heap the apple mixture into it and level out as much as possible
5. In a small mixing bowl, combine 1 c. oats, 1/2 c. flour, 4TB sugar, 1 TB cinnamon and 100og/3ozs softened butter
6. Mix crumb topping over apples
7. Bake at 15 minutes @ 200/400, then reduce to 180/350 for about 40 minutes

Apple Sauce
3 1/2 c.
‘don’t throw the sad apples away..sauce them’

7-8 apples–granny smiths are the best. it’s also better if they’re a bit over the hill
1/2 c. water
1/2 TB salt
1. Find some ’sad’ apples and rescue them

2. Peel, core and chunk up the apples into a large sauce pan





3. Add about 1/2 c. water
4. Over a medium heat simmer/boil for about 30 minutes..or until apples are easily mashed with a fork. The softer the apples the quicker the cooking. make sure that there is enough water.
You can add pears to the applesauce if you’d like a complex flavour. You can also add cinnamon if you want. Knock yourself out!

Anzac Biscuits
3-4 dozen
‘a crunchy oatmeal cookie. they were the only cookies that could survive the trip from Australia to the soldiers in WWII stationed in Turkey’

1 c. desiccated coconut–ground coconut
1 c. rolled/old fashioned oats
1 1/4 c. plain flour
1 c. white sugar
1/4 c. brown sugar
4 oz (1/2 c.) + 2 TB butter
5 TB. golden/maple syrup
2 tsp. baking soda
1 TB + 2 tsp. boiling water
1. In a bowl mix the flour, sugars, oats, coconut
2. In a small sauce pan melt the butter and syrup
3. In a small bowl, after the butter and syrup is melted, combine the baking soda and hot water. Immediately add to the syrup/butter mixture.
4. Place the mixture in with the dry ingredients
5. Preheat oven to 350/175
6. Place ‘ping pong’ sized balls of shaped dough on a greased sheet and place in preheated over for about 15 minutes. They will LOOK BROWN. That’s ok. They are NOT ready to be taken out of the oven until they are browned over the top of the whole cookie
7. Let sit on the baking tray for about 2 minutes
8. Let cool COMPLETELY. They are meant to be very crisp

Last night I was SO tired that I couldn’t possibly muster up the strength to blog…so this is what I gots up to yesterday.
I work in an office of about 10 people..so well decided that we wanted to go out for lunch. We headed over to Little Creatures. It’s this funky brewery that draws in tons of people and does a great job of catering to huge groups of people.

Food: I ordered a porotbello mushroom sandwhich. I didn’t eat the bread and only ate about 1/2 of the fries. I was really REALLY proud of myself. I just ate until I was full.

I then went over to Ervina’s to have what us Americans called ‘Chinese Fondue’. First some of my great friends–Julie and Nicole and Ervina and I


How does Chinese Fondue work? You throw all of this into a big of chicken stock.

Those white things are amazing. They are pork filled yumminess. The brown balls are vegetable balls–they are also amazing. The crab stick things I am not too sure that I would like and I LOVED them.
Wait, there’s more!

See those monsters ont the right..they’re headed prawns..SICK. Chinese cabbage, mushrooms and tofu. YUMMY!
What do you do? Throw it all in the pot together.

This is my bowl. Well I may have had about four of the..they are small..and man were they delicious.

I even be-headed four of those bad boys..yes..they do look like they are looking at you. SICK.
An awesome cake which Julie made..I only had two bites.

Nicole and I then headed to a baseball game..she has a ‘friend’ who plays. Cute.

I had such a great night. I didn’t over-eat. I didn’t feel like I needed anything more than to enjoy the people who I was around. I hope that you all had/are having a great Friday Night.
I am off to meet up with a friend..I have BIG news to share with you later on today..yikes…a big life changer..yikes.

Then I made Pig Lickin’ Cake! It’s amazing..you should make it..you wont regret it AT ALL!

Even nicole likes it!

Pig Lickin’ Cake
24 big pieces– 1- 9×13 pan

1 box of yellow or white cake mix
4 eggs
1/2 c. oil
1 large can of peaches undrained
600ml of whipping cream or 1- 12oz container of cool whip
1 packet of vanilla pudding mix
1 large can of crushed pineapple undrained
- Mix cake mix, eggs, peaches and oil together
- Place into an greased 9×13 pan and bake @ 350/170 for about 30 minutes.
- Once cooled combine whipping cream, pudding mixture until firm whipped cream is formed.
- Gently incorporate the crushed pineapple
- Spread over the top of the cake
- ENJOY!

Hey there,
I have to admit that right now I am looking like a GREASER. I have put coconut oil throughout my whole entire head. You may think that I am crazy…but let me tell you. If you have a dry, irritated scalp it does wonders.
Ok…what did I get up to tonight?
My friend Anders‘ birthday is on Saturday.

So I am sending him a care package. He lives in Timor, he is the friend which I went and visited while I was in Timor.
(For those of you who may not have known..I went to Timor in July of this year and it CHANGED my life…see here and click on the Timor posts. It is the reason that I am going to nursing school next year.)
Anyways, Anders has pretty much given his life to live in the GLORIOUS mountains of Timor running a free clinic for people.
I e-mailed him to see what he’d like to have for his birthday…because our mutual friend Lou is going up this weekend. He wrote back and I got baking!
Anzac Biscuits–an Australian cookie/biscuit..the recipe I PROMISE will come later this week
They’re a SUPER crunchy oatmeal/coconut cookie–vegan
that were sent from Australia to the soldiers in WWII..the only ones that could travel. A great cookie to be sending to Timor.
He also requested chocolate cookies..this is what I could muster up..not awesome..but when you live in the mountains of Timor, anything like this is superb.

One was plain, one was w/ chunky PB.

Then my foot started cramping…oh my god..have you ever had that happen? It hurt SO BAD!
I am excited for Anders to get his care package and I am also excited for everyone in Timor to have a go, as they say, at some cookies
