Apple Sauce
3 1/2 c.
‘don’t throw the sad apples away..sauce them’

7-8 apples–granny smiths are the best. it’s also better if they’re a bit over the hill
1/2 c. water
1/2 TB salt
1. Find some ’sad’ apples and rescue them

2. Peel, core and chunk up the apples into a large sauce pan





3. Add about 1/2 c. water
4. Over a medium heat simmer/boil for about 30 minutes..or until apples are easily mashed with a fork. The softer the apples the quicker the cooking. make sure that there is enough water.
You can add pears to the applesauce if you’d like a complex flavour. You can also add cinnamon if you want. Knock yourself out!

Hey there,
Today has been one of those days where it took a bit to get going..but once 3pm came around I finally got the urge and FOCUS to start working.
Does that ever happen to you? I swear that I am FOR SURE a 3pm-midnight worker.
Serve of the Vegetable Bean ‘Crock-Pot’ soup. It was good. I coupled it with 2 very small organic carrots and homemade skinny hummus. Maybe a chocolate bar snuck in.


I then drank about four cups of tea. I am really REALLY trying to stop from snacking at work. I notice that food at work is a distraction from doing work. I’d mindlessly eat all day long at my computer if I allowed myself to. Instead I check gossip columns, chat it up on Twitter, and maybe check my Farmville on Facebook. (if you don’t have a farm..you should get one).
I then came home and went straight to the store with my friend Nicole because we needed to get into the grocery store. One of the nice things about Australia is that they place a heavy emphasis on family, ie no grocery store except over-priced ones are open past 7pm.
I came home and put the remaining of the Vegetable Bean ‘Crock-Pot’ Soup in 1 c. serves. They look like an army in my freezer.

I am telling you…getting yourself organised to have meals is pretty much the most amazing thing ever. I love knowing that I have food ready and that it can be eaten within a flash.
I then came home and had some leftovers for dinner. Nicole and I tried to watch the new episode of Gossip Girl online, but we couldn’t find anything that would stream the final five minutes—HELLO the most important part of the WHOLE episode.
GRRRRR.
I then wanted something to eat. I did find ice cream and an annoyed to say that I had about 3 TB. Stupid. It’s ok..tomorrow I won’t. Instead of shoveling it into my face
I cut a celery stalk in half w/ about 1 ½ heaping TB of natural peanut butter and 1 TB of raisins. ANTS ON A LOG!

You can’t take the goodness away from something so fantastic.
Well I am off to read more of the Mindless Eating book that I talked about earlier today. I am going to be working on a new post, post 4, of the F-WordsSuccess. of It’s gonna be a hard post to write for me, because of the six that I am going to talk about…this is the one I am STRUGGLING with the most.

All I have to say is that my millionth batch of hummus is gone. Just have to make more of it!!!!
After my breakfast today of brown rice and egg whites..I honestly didn’t feel all that well. I do remember that the Japanese doctor said to stay away from fiber..so brown rice is out. If I eat gluten free noodles and/or rice noodles or white rice I am fine.
Still learning.
I snacked on an orange!
I went home today and got some mail. It was a wedding invitation for my friend Susan. Susan is a gorgeous girl..man she’s great. I’ve known her since before Kindergarten. She travelled around New Zealand and rekindled her high school relationship with Zach. They’re getting married. I LOVE their wedding invitations. So incredibly simple and amazing.
I then made my favourite, favourite go to lunch…a warm tortilla w/ hummus, tomato paste and grilled veggies.
I started off grilled up 1 small onion, 1/4 red pepper, 1 small chili (which I got in my eye), 2 mushrooms, 1 small tomato. I didn’t use oil, just water instead to saute them down.
Then on a gluten free wrap I spread 1/4 c. of Skinny Hummus (made w/ kidney beans) and 1 TB of tomato paste (make sure yours doesn’t have sugar in it). I love LOVE tomato paste..I can eat it straight out of the jar.

Then I added the grilled veggies to 1/2 of the wrap and placed back in the pan I cooked the veggies in to warm it up. This is also a great trick if you put cheese on it.

I then topped the veggies w/ a bit of lettuce and cut in half to make a ’sandwhich’. Then I devoured it.

I had these chilis in my ’sandwhich’ and they were so hot.

My mouth was one FIRE. Then my eye was on fire cause I touched it
I snacked on a pear after eating my lunch to cool down a bit!

It’s going to be another long night. I have spin class planned and I haven’t sorted what I am going to do for dinner yet. Hopefully something yummy. I have a huge pumpkin that hasn’t been eaten and needs to get eaten. Maybe roasted pumpkin..who knows. Anyways…yumo!

It’s been crazy, but a good kinda crazy this afternoon.
I decided that I needed to head to the markets and get some food, cause tomorrow I wont have anytime to get to them. Have you ever seen these fruits before? They’re awesome. They’re fleshy on the inside and sweet while hard on the outside.
They have samples at the place that I always go. I have one fruit stand that I always go to..it’s my favourite.
Then I saw these..an Aztec Fruit. Really? It’s got the consistency of an avocado but it’s sweet. It was smooth.

I snacked on some grapes and a decaf long black!

Here’s my loot. A big box of vegetables and fruit.
What was I thinking wearing high heels to the market..I wanted to look and feel cute. Usually on the weekends I don’t care, but I am trying to care more because it makes me feel better about myself…especially since I am not as thin as I’d like to be.
Lunch was the rice mixture from this morning with left over fish from last night. I didn’t want to add oil to it..so instead I make Purple Skinny Hummus. Didn’t have any chickpeas so I used kidney beans instead. Wasn’t bad!

I NEED YOUR HELP!
I am not snacking well. I mean I am snacking on good things..but I am not sitting down and snacking properly.
I had this afternoon:
1 apple

A handful of carrots

2 small bananas, 10 almonds, a little handful of cereal and 1/3 of a biscuit. I am annoyed because I just want to find snack options which I enjoy…and aren’t the bloody same every day.
I also really REALLY need to cut back my fruit intake. I had 4 small bananas, grapes, one large apple. TOO MUCH fruit.
I challenge you…I need SNACK IDEAS!
-No gluten
-No soft dairy (cottage cheese, milk yogurt)
-No sugar
Yeah, see…it’s not easy. Ok..go I need IDEAS..please. Anything!

This afternoon I decided that I needed to go for a run. I haven’t gone in awhile and have decided that I am not going to be setting this goal or that goal. I am deciding that this is a LIFESTYLE change.
Thus, I have done the following things:
- Thrown out the scale. I will got to WW once a week though. I like the community.
- I got in touch with my body. Last night I put on my jeans on and simply observe how they felt. They were tight. It was nice to be in touch with my body, to feel the way clothes fit and to think to myself..running will get me feeling better in this. Instead of ‘I am so fat’. You should do it. Get in touch with your body.
- I look at foods that aren’t good for me as poison..they are poison. You want to see what my intestine looks like with Candida…here ya go!
when I eat things like sugar, drink alcohol etc..I increase the look of this. Thus, what ends up happening is these little patched of overgrowth then open up my intestinal wall for the toxins and food to get into my bloodstream and then go throughout my body. This then creates allergies.
- I am off Birth Control. I did some research and although there isn’t hard fast evidence that birth control can cause Candida or Celiac Disease it does for some people mess with the gut flora and balance of your intestines. I think it’s interesting that I’ve never had any problems and it only started after I went on the pill. I am not saying that Birth Control is bad, it works for millions of women and I would NEVER EVER think of taking that away for women. However, it has made me incredibly moody, and now if this is true perhaps has caused a bit of gut imbalance. There aint no men in my life to warrant being on it. I think for women it’s very acceptable to be on it, however I do think that there are side affects which women need to be aware of.
- Made a jar of a weeks worth of workouts
I cut them up and put them into a wine glass
. I don’t like feeling like I have to work out. Isn’t that silly? So I put all of the training regimes that need to happen this week for my City2Surf Race. Everyday I lace up and go for whatever run I need to. Today it was the 5km.
I got home and was starving so I made some awesome 1/4 c. cereal and rice milk w/ 1/2 c. of berries and 10 almonds microwaved for 2 minutes.
I think that I had two more rice cakes and a touch of hummus.
For dinner Nicole and I had awesome fish fillets w/ Italian spices, Tomato/Cucu/Avocado/Carrot salad w/ balsamic, sweet potato and I had about 1/4ish of a cantaloupe!

Well I am off to go and watch Ladder 49! Have you seen it?
Tomorrow is my big day, the Blue Tounged War! I have 9lbs of cheese, 4 lbs of pasta…any idea what I am making. Stay tuned tomorrow for the Blue Tounged War post-cooking wrap up. I am super excited for it.

Today is one of those days when you are thankful..right now..that you’re single and childless. Why? Cause I don’t have the stamina. I know that having a partner and having children is a slow adaptive process..but man being a parent is full-on.
After my grumpy morning, I went for a quick jog around the block and got caught up with the SJC. I have to say though that I really REALLY wanted to BINGE today but I didn’t give into it AT ALL.
I did have two of these granola bars.


I asked myself ‘Michelle, why are you wanting to binge?’ and I honestly thought back..it’s cause you don’t want to work out. GET YOUR ASS OUT ON THE PAVEMENT..it’s exactly what I did. No binge for me.
Lunch was a huge sushi roll with just cucumbers and 1 apple–organic pink lady and I think I fell back in love with organic apples–SO MUCH BETTER.
I met up with Lou to discuss how her 20 month experience in Timor was like. She went up as a voluenteer and then got a paid position with the Minestry of Education. She was fabulous..I told her I’d put her on the blog..she’d be famous. She didn’t understand why I was taking pictures..most people don’t.
I snacked on some grapes from the markets..they made me feel ill. Too much sugar in them. Damn it.
I then went over to my friend Sarah’s house (american) to take her adorable five year old boy to the park. Adorable.

‘Michelle, this is my favorite part of the park’. I know Lochlain. A man after my own heart. I do recall a night when I was a little drunk on the champagne, jumping on the exact swings….
We also went to ColdRock, same as ColdStone, and got L a kiddie ‘Bubblegum w/ mini m&m’s and gummi bears’. I had one bite of it..that’s it…and I felt it.
Went over for dinner at Sarah’s house. Did I mention the she’s an amazing cook. She makes this amazing sourdough bread–no sugar
. She’s had the same sourdough starter for six years. I had three small piece throughout the night. I can’t resist fresh bread.
Lochlain and I played checkers and slap. We had a good day. Dinner was awesome. Oven baked fish strips (for me) with a yummy salad topped with balsamic and a baked sweet potato.

As I was leaving
Lochlain goes ‘Michelle, are you having babies?’
I respond back ‘not until I find a man.’
He looks at me, pauses and goes ‘I’ll be your husband.’

Purple Monster

1 banana
1 c. of frozen blueberries
1 c. of milk–I use rice milk
1 1/2-3 c. of spinach
1. Put everything into a blender or a food processor and enjoy!

Gluten Free AMAZING Bread
1 -9×5 loaf

This recipe is adapted from Karina’s Kitchen.
2 c. of gluten free plain flour
1/2 c. of gluten free self-rising flour
2 tsps. xanthan gum
2 tsp. of baking powder
1/ 1/4 teaspoons fine sea salt
1 tablespoon instant dry yeast- or rapid yeast
1 1/4 cup warm water (at 110 to 115 degrees F)
1 tsp. white sugar
4 TB extra virgin olive oil
3 TB honey
1/2 teaspoon white vinegar
1 egg whisked
1 TB olive oil
Salt
1. In a sauce pan add milk and heat to no warmer than 110-115F
2. In a cup add heated water, 1 packet of dry yeast or 1TB equivalent, and 1 tsp of sugar and set aside
3. In a mixing bowl combine all dry ingredients. I have a kitchen aid blender and simply used the bread hook on it throughout the whole thing. It worked great!

4. Then I combined the 4TB of olive oil and 3 TB of honey.

5. Wisk the egg with the vinegar.
6. Add the egg, olive oil/honey, and fermented yeast/sugar/milk concoction to the dry ingredients.


7. Place into a normal bread pan. Let it rise for about 20-30 minutes. Mine is silicone so I didn’t grease it. If you have a normal bread pan, you might want to grease it a bit.
8. Preheat oven to 350/180

9. Top with 1 TB of olive oil and sprinkle with salt.

10. Bake for about 30-40 minutes..or until you get a hollow sound when knocking on the top of it.
11. Take out of oven and try not to shove it in your face!

Winter has FINALLY arrived in Fremantle. When I say arrived..I mean horizontal sheets of rain, skirts flying up and umbrellas inverted. I thought that I could use my umbrella to avoid getting drenched, but the wind inverted it about 10 seconds after I walked outside. Thus, today’s hair has the ‘wind whipped’ look.

I have had a great day. I woke up this morning to some pretty amazing blog posts..sat there crying a bit. I feel like I am finally beginning to release the negative monster in my head. I am starting to love myself. With that I started off my day with a huge vegetable 6 egg white omelet and the LAST
Pumpkin Banana Muffin!

I then got a huge decaf long black/american w/ a splash of soy.

Sushi and grapes for lunch. Sushi was chicken w/ cucumber and avocado with wasabi. Do you love wasabi? I LOVE IT..I love the shot of burn in the nose. It’s addictive.


I came home after getting my lunch to find an awesome package from my friend Shannon. Getting mail while you’re away from home is pretty much like winning the lottery. She put a little note in there which I really liked.

I love the line ‘Oh well-life is fluid, and thank God for that!’
Snack was 2 dates (only one pictures) and some carob covered rice crackers.

As well as the last Coke Zero I am going to have (tear)

I also enjoyed a small little Australian chocolate bar. I enjoyed this chocolate bar and instead of feeling guilty about it..I enjoyed it. I didn’t want another one..small baby steps.

I always come home from work starving. I have learned that it’s not about filling up, it’s about tying me over. So I have 1 apple and a few almonds and walnuts.

So my night can be summed up in a poem:

Pumpkin Banana Muffins-light
16 serves
*110 calories, 1.5 g. fat, 1.6 g. protein per serve*

2 c. of mashed pumpkin or butternut squash* will increase calories
1 1/4 c. of applesauce
2 eggs
2 tsp. vanilla
1 tsp. baking soda
1 TB cinnamon
1 banana
2 c. of flour (I used gluten free flour)
2 tsp of zantham gum if you use gluten free flour
1. Bake or microwave or boil or steam pumpkin until you have 2 c. of mashed pumpkin.
2. preheat oven to 180/350
3. In a mixing bowl combine eggs, apple sauce, vanilla, cinnamon.
4. Add in mashed pumpkin and banana
5. Add in flour and baking soda
6. Place in well greased muffin pans. I had silicon muffin liners which worked amazing. I also tried paper liners and the muffins stuck to them.
7. Bake for about 15-20 minutes.
